These muffins are a source of choline, viatmains B-1, B-6, B-12 and E, follate, magnesium and selenium. Taste great! It's like healthy "oatmeal to go". (Makes 12-15 muffins dependent on how you fill tin.)

Recipe Ingredients for Oatmeal Apple Cinnamon Muffins

1 1/4 cup whole wheat flour
1/2 cup oatmeal
2 tsp baking powder
1/2 cup light brown sugar
2 large eggs
1 cup fat free milk
1/2 cup peanut oil
1 tsp vanilla extract
1 tsp ground cinnamon
1 large cooking apple

Recipe Directions for Oatmeal Apple Cinnamon Muffins

  1. Preheat oven to 350 F/180 C. Line 12-hole muffin pan with paper muffin cases.

  2. Sift the flour, oatmeal and baking powder together, add any left from the sifter strainer. Stir in the sugar and cinnamon.

  3. In a separate bowl beat the eggs, milk, and oil until well combined. Add the dry ingredients to the wet including the vanilla and stir until well combined. Do not overmix.

  4. Peel, core and grate one large cooking apple and stir or fold in with mixutre.

  5. Spoon mixture into prepared, lined muffin pan and bake for 20-25 minutes or until risen and golden brown. Let cook in pan for 10min. Serve warm or cool on wire rack.

  6. *Variation: You can use 2/3 cup stewed or pureed apple instead of the raw grated apple.
