This recipe makes wonderful cookies. I tried listing Sugar Twin brown sugar replacement instead of regular brown sugar, but calorie-count doesn't have it listed. Try that substitution as well as substituting some of the butter with applesauce. Remember light butter contains water, so don't use too much of it in baking.

Recipe Ingredients for Oatmeal Almond Cookies

1 cup butter
1/2 cup light butter
2 cup brown sugar
2 eggs
1 tbsp vanilla
1 1/2 cup flour
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
6 cups rolled oats
2 cups almonds

Recipe Directions for Oatmeal Almond Cookies

  1. cream butter and sugar. Add eggs and vanilla and mix.

  2. in separate bowl, whisk together flour, cinnamon, baking soda and salt.

  3. Add the flour mixture to the butter mixture.

  4. Add nuts, then hand mix in rolled oats.

  5. Drop by Tablespoons on parchment lined cookie sheet and bake 12 minutes in 300 degree oven or until edges turn brown.
