Hearty, whole-grain oat pancakes.

Recipe Ingredients for Oatcakes

1.5 cup Oats, Rolled, Regular Old Fashioned
2 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
1 large Egg, Whole
0.5 cup White Whole Wheat Flour
3 tsp Sugars, Granulated
1 serving Baking Soda
0.5 tsp Cinnamon, Ground
0.5 tsp Salt, Table

Recipe Directions for Oatcakes

  1. For the buttermilk you could substitute plain kefir or plain yogurt thinned down with nonfat milk.

  2. Whisk buttermilk and egg together in large bowl. In another bowl, combine oats, flour, sugar, salt, baking soda, chopped walnuts, and cinnamon. Stir dry ingredients to combine. Stir the dry ingredients into wet ingredients. Let stand 15 min. Cook pancakes on griddle hot enough that a drop of water dances. Turn when bubbles develop on top of pancakes. Serve with blackberry sauce, peanut butter, applesauce, or real maple syrup and butter.
