An alternative to pancakes. Great for those with cholesterol issues.

Recipe Ingredients for Oatcakes

1 c. oat flour
1/4 c. old fashioned oats
1 egg white
3/4 c. enriched rice milk
1 tsp. baking powder
1/2 tsp. vanilla extract
2 tsp. canola oil

Recipe Directions for Oatcakes

  1. Combine all ingredients. Blend just until combined.

  2. Heat a griddle and lightly oil. Pour batter on in 1/4 c. portions. Cook on each side for 2 minutes or until cakes cook through.

  3. Serve hot.
