Excellent muffins for breakfast. Very filling

Recipe Ingredients for Oat Zucchini Muffins

3/4 cup oatmeal
1 cup fat free yogurt
1 1/4 cups whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chopped walnuts
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1 cup zucchini, shredded
1/3 cup applesauce
1 egg, beaten
1/3 cup splenda
1 teaspoon vanilla

Recipe Directions for Oat Zucchini Muffins

  1. Preheat Oven to 425.

  2. In small bowl, mix oatmeal, yogurt and 1 T. water. Lte sit 30 minutes.

  3. In medium bowl, mix flour, powder, soda, spice, salt and walnuts.

  4. In large bowl, mix oil, egg, sweetener, zucchini and vanilla. Stir in oat mix. Stir in flour mix gently. Divide evenly among prepared muffin cups. Spring with a few raw oats. BAke 15 minutes.

  5. Freeze well and great toasted!
