Gluten-free oatmeal raisin cookies

Recipe Ingredients for Oat So Good Cookies

1/2 cup butter
1/2 cup brown sugar, lightly packed
1 egg, large
1 tsp. vanilla extract
1/2 tsp. baking soda
1/4 tsp. salt
1 cup flour
1 1/4 cup rolled oats
2 cups raisins

Recipe Directions for Oat So Good Cookies

  1. Cream butter, brown sugar, egg and vanilla together until fluffy.

  2. Add baking soda and salt to flour and mix well. Blend flour mixture into creamed mixture.

  3. Stir in remaining ingredients.

  4. Refrigerate cookie dough for 30 minutes before baking.

  5. Drop by teaspoonfuls onto greased cookie sheets, allowing space for spreading.

  6. Bake at 375 F for 8-10 minutes or until golden.

  7. Cool 5 minutes on baking sheet before carefully transferring to wire racks.
