Recipe Ingredients for Oat Pancakes

0.75 cup Milk, Lowfat, Fluid, 1% Milkfat
6 oz Greek, Non-Fat, Plain Yogurt
0.75 cup dry Old Fashioned Oats
0.5 cup Whole Wheat Flour
0.5 cup Oat Flour
3 tsp Baking Powder
1 tsp Sea Salt
2 large Egg, Whole
4 tbsp Honey, Strained Or Extracted

Recipe Directions for Oat Pancakes

  1. In a large bowl, mix together milk, yogurt and oats. Let stand for 5 minutes.

  2. Stir together flours, baking power and sea salt.

  3. Gently stir eggs into oat mixture. Stir in honey (you can use splenda to cut down calories) and oil, then the dry ingredients.

  4. Prepare fruit topping.

  5. Drop by 1/3 cupfuls onto a greased skillet heated to medium-high. Cook until tops are bubbly and edges look cooked.

  6. Serve with fruit topping and, if you wish, finely chopped pecans. Makes 8-10 pancakes
