Recipe Ingredients for oat muffins (v1.2)

1/4 cup olive oil
1 medium egg
1 cup brown sugar
1 cup self-rising flour
1 cup quick-cooking oats
1/4 cup chocolate chips

Recipe Directions for oat muffins (v1.2)

  1. Cream sugar and oil, add egg.

  2. Mix in flour and oats.

  3. Spray 6-cup muffin tin with baking spray, then press 1/2 of the mixture into the cups.

  4. Place six chocolate chips on each muffin, then top with remaining mixture.

  5. Bake at 325 for ~25-30 minutes, until lightly browned. Press a couple of chocolate chips into the tops of each warm muffin. Cool.
