Oat Muffins Recipe

Makes 6 servings



Modified South Beach recipe (used reduced fat buttermilk; no walnuts). Note - the splenda is brown sugar version.

Recipe Ingredients for Oat Muffins

3/4 c oats
1 c reduced fat buttermilk
1 1/4 c whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp cinnamon
1/4 tsp salt
1/3 c unsweetened applesauce
1 egg
1/3 c splenda
1 tsp vanilla

Recipe Directions for Oat Muffins

  1. Preheat oven to 450. Coat 6-cup nonstick muffin pan (or 12 if you want tiny muffins) with cooking spray or line with paper baking cups.

  2. In small bowl - oats with buttermilk. Soak for 30 minutes.

  3. In medium bowl - flour, baking powder, baking soda, cinnamon, salt (SB recipe adds walnuts here - I add chopped apples or raisins sometimes).

  4. In large bowl - oil, egg, brown sugar Splenda, and vanilla. Blend well.

  5. Stir in oat mixture. Stir in flour mixture.

  6. Spoon into pan. Sprinkle with oats to top.

  7. Bake 11-15 minutes or until toothpick comes out clean.

  8. Cool on rack for 5 minutes. Remove from pan cool completely.
