Recipe Ingredients for Oat & Flax Raisin Muffins

3/4 cup rolled oat
1 cup non-fat sour cream
1/2 cup oil
1/4 cup honey
1/4 cup brown sugar
1/4 cup egg white
3/4 cup flour
1/2 cup ground flax seed
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup raisins

Recipe Directions for Oat & Flax Raisin Muffins

  1. 1. Preheat oven to 400 degrees F.

  2. 2. Soak oats in yogurt or sourcream just enough to make it moist.

  3. 3. Sift dry ingredients into a bowl.

  4. 4. In a separate bowl, add oil, sugars, and egg.

  5. 5. Beat until well blended.

  6. 6. Gradually fold in dry ingredients.

  7. 7. Add chopped cranberries.

  8. 8. Put in greased muffin tins.

  9. 9. Bake for 20 minutes.
