Made with New Life high-protein oatmeal. Makes a portable breakfast high in fiber and protein.

Recipe Ingredients for Oat-Flax Breakfast Muffins

1 serving NL High-protein Oatmeal (pkt)
2 tbsp Organic Golden Flaxseed Meal
13 g oat bran
1/4 cup egg whites
1/4 tsp baking powder
1/2 tsp cinnamon
1/4 cup water

Recipe Directions for Oat-Flax Breakfast Muffins

  1. Preheat oven to 425. Grease a mini muffin pan (6 wells).

  2. Stir together the oatmeal, flaxseed meal, oat bran, baking powder and cinnamon. Add in about 2 tablespoons Truvia or Xylitol noncaloric sweetener.

  3. Beat the eggs whites briefly and combine with the water. Stir together the wet and dry ingredients.

  4. Drop by tablespoons evenly into the prepared muffin pan. Bake for about 20 minutes until tops spring back when lightly touched. Turn out to cool on rack.

  5. May double the recipe and package in plastic bags to have a quick healthy breakfast on busy mornings. May also freeze.

  6. 6 mini muffins = 1 serving.
