My favorite cookies. You can fill them with nuts, dried fruits or/and chocolate chips. You can substitute water for juice, any shortening or butter for oils, ground oatmeal for oat flour and you still are going to have great cookies.

Recipe Ingredients for Oat cookies

150 g organic coconut oil
50 g organic extra virgin olive oil
220 g sugar
20 g raw honey(or sugar)
3 g cinnamon
1 tsp vanilla
75 g unsweetened apple sauce
7 g baking soda
200 ml apple juice
200 g oat flour
200 g whole wheat flour
350 g all-purpose flour
1 cup raisins

Recipe Directions for Oat cookies

  1. All ingredients should have room temperature.

  2. Preheat an oven to 360F.

  3. Mix oils(coconut oil should be soft), 100 g sugar, honey, vanilla, apple sauce and beat them for 3 minutes.

  4. Add warm apple juice and beat for another 3 minutes.

  5. Combine flours, baking soda, cinnamon, 120 g sugar in another bowl.

  6. Mix all ingredients until combined.

  7. Roll out dough on floured surface 1/4 inch thick. Cut into shapes with any cookie cutter. Place cookies on ungreased cookie sheets.

  8. Bake for 20 to 25 minutes until golden brown

  9. Cool
