"An adult cookie - not too sweet" I would add only 1/2 c. sugar next time.

Recipe Ingredients for Oat Cakes

1/4 t. baking soda
1/3 c. water
2/3 c. sugar
1 c. rolled oats
1 c. all-purpose flour
1 c. wheat bran
1/2 t. baking powder
1/2 c. butter

Recipe Directions for Oat Cakes

  1. Add boiling water to baking soda. Set aside.

  2. Mix together the sugar, oats, flour, bran and baking powder. Cut in the butter.

  3. Form into 2 balls. Roll out to 1/8" to 1/4" thickness. Cut in 2" squares.

  4. Place on parchment lined cookie sheet. Bake for 8 to 10 minutes until slightly browned.

  5. Serve warm or at room temperature.

  6. Makes about 36.
