Delicious pudding like oat cake - wonderful topped with berry compote and whipped cream

Recipe Ingredients for oat cake

1 cup oats
1 1/2 cups flour
1 cup brown sugar
1/2 cup white sugar
1 stick butter
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 1/2 cups boiling water
2 eggs

Recipe Directions for oat cake

  1. soak oats in 1 1/2 cups boiling water for 30 minutes, drain excess water

  2. cream softened butter and sugars

  3. Add eggs one at a time

  4. add oat mixture, mix to combine

  5. sift together dry ingredients - flour, cinnamon, nutmeg and salt

  6. add dry ingredients to creamed mixture. mix just to combine

  7. Pour into a 9 inch pan coated with non stick cooking spray

  8. Bake at 350 for about 40 minutes or until done.

  9. Top with berry compote and whipped cream
