Recipe Ingredients for Oat Buns - From the "Just 100 Calories" Cookbook

2 cups Rolled Oats or Plain Quaker Oatmeal
1/4 cup light brown sugar - heaping
1/3 cup chopped dried apricots
2 tablespoons dried cranberries
2 tbsp slivered almonds
1 tsp ground cinnamon
2 egg whites

Recipe Directions for Oat Buns - From the "Just 100 Calories" Cookbook

  1. Preheat oven to 375. Line a 12 a 12-cup muffin pan with 12 paper cups. Place the oats in a mixing bowl and add the sugar, apricots, cranberries, almonds, and cinnamon.

  2. Beat the egg whites in another bowl until frothy, then stir into the dry ingredients and mix well together. Using your hands, take about 1 tablespoon of the mixture and press together. Place in a paper cup. Continue until all the mixture has been used up.

  3. Bake for 15 to 20 minutes, or until tops are beginning to crisp. Remove from the oven and leave until cold before serving.
