Wheat free, low GI substitute brown rice for oats ricotta for cottage cheese

Recipe Ingredients for Oat and Buckwheat Pancake

1 cup buckwheat flour
1 cup quick oats
1 cup cottage cheese
1 egg
1 tsp baking powder
1 1/2 cup skim milk
1 dash cinnamon
1/2 cup blueberries

Recipe Directions for Oat and Buckwheat Pancake

Combine all ingredients in bowl and mix until combined. Lightly spray non stick pan with oil and preheat. Scoop 1/4-1/3 cup of batter into pan for each pancake. Cook until bubbles appear, then flip and cook until golden. Serve with honey or pancake syrup.
