makes 3 loaves or 24 rolls (I figure the loaf of bread would yield 12 slices)

Recipe Ingredients for oat bread

3 1/2 t yeast
1 T sugar
2 1/2 c warm water (100-110 F)
1 c quick oats
1 c whole wheat flour
2 t salt
1/3 c brown sugar, packed
1 3/10 c canola oil
4 1/2 c bread flour (may need more)

Recipe Directions for oat bread

  1. Dissolve yeast , 2 T bread flour, and 1 T sugar in 1/2 c of the warm water. Let sit for about 5 minutes until foamy.

  2. Add the remaining water, oats, whole wheat flour, salt, brown sugar, and oil. Stir to combine. Begin to add the bread flour 1 c at a time to start with, until it becomes too stiff to stir by hand. Turn out onto a floured surface and continue to knead in more bread flour. The dough will be fairly sticky, but try to get it to a good elastic consistency, about 5 minutes.

  3. Place dough in a large, lightly oiled bowl, and cover with a piece of greased foil, or a clean damp cloth. Let rise in a warm place for about an hour, or until double. This will also rise in the refrigerator if you need more time. It will take about 2.5 hours to double in the fridge.

  4. Deflate dough, divide into rolls or loaves. If making rolls, place about 2 inches apart on a greased cookie sheet or use parchment paper. If making loaves, grease the pan first. Let proof for another 45 minutes, covered gently, until doubled again. If you did your first rising in the fridge, it may be more like 1-1.5 hours.

  5. Preheat oven to 350.

  6. Bake rolls for about 22 minutes, until golden brown. Bread will take about 35 minutes. Internal temperature will be around 200 F.
