Not low calorie, but high fiber and nutritious! Makes 24 cookies.

Recipe Ingredients for Oat Bran and Raisin Cookies

2 cup oat bran flour
2 tsp baking powder
1/3 cup splenda
1 tsp cinnamon
1/2 tsp nutmeg
1/3 cup honey
1/4 cup salad oil
2 egg whites
1 cup raisins

Recipe Directions for Oat Bran and Raisin Cookies

  1. Preheat oven to 350. Lightly grease cookie sheet.

  2. In a large bowl, mix first 5 ingredients. In a small bowl, beat honey, oil and egg whites until blended. Stir into the oat bran mixture until mositened. Fold in the raisins.

  3. Drop dough by tablespoonfuls, about 2 inches apart, onto cookie sheet.

  4. Bake abou 15 minutes, or until edges are lightly browned. With metal spatula, remove cookies to wire rack to cool. Repeat until all dough is used, lightly greasing cookie sheet each time

  5. Makes 24 cookies.
