Recipe Ingredients for Oat & Bran Pancakes

2 large eggs, separated
1/2 cups milk
1 cup flour, white
1/2 cup bran
1/2 cup rolled oats
2 1/2 tsp. baking powder
2 tbsp sugar, granulated
1 pinch of salt, table

Recipe Directions for Oat & Bran Pancakes

  1. Place the egg yolks and milk in a large bowl. Sift over flour, baking powder and salt; mix well. Add oats and mix in strongly. Mixture should be fairly thick, but supple. If mixture is dry add a touch of milk

  2. Whisk the egg whites in a clean grease-free bowl until they form soft peaks. Beat in sugar. Fold into the flour mixture.

  3. Heat a large non-stick frying pan. Drop pancake mixture into the hot pan and cook until bottom is crisp and lightly browned. Turn over and cook for a further until bottom is also browned. Continue cooking, flipping periodically until cooked through. Transfer to a clean tea towel to keep warm. Cook the remaining batter in the same way.
