12 muffins made with Hodgson Mill oatbran

Recipe Ingredients for Oat Bran Muffins

2 1/4 c cereal, oat bran, Hodgson Mill
1/4 c pecans, chopped
1/4 c raisins
1 T baking powder
1/4 c brown sugar
1 1/4 c skim milk
2 egg whites
2 T vegetable oil

Recipe Directions for Oat Bran Muffins

Preheat oven to 425 F. Combine oat-bran cereal, nuts, raisins, brown sugar and baking powder. Mix the milk, egg whites, and oil together and blend in with the dry mixture. Line muffin pans with paper baking cups, and fill with batter. Bake 15 to 17 minutes. Test for doneness with a toothpick. It should come out moist but not wet. Makes 12 muffins. Store in a plastic bag to retain moisture. Keep the muffins in the refrigerator if not consumed in 3 days, as they contain no preservatives.
