Delicious vegan jam filled bran muffins.

Recipe Ingredients for Oat Bran Muffins

2 tbsp (30g) ground flaxseed
6 tbsp water
2 cups (200g) raw bran
1 cup all purpose flour
1/2 cup brown sugar
4 tsp baking powder
1 1/4 cups soymilk
1/4 cup canola oil
1/2 cup raspberry jam

Recipe Directions for Oat Bran Muffins

  1. Whip together flaxseed and water.

  2. Add wet ingredients and mix.

  3. Thouroughly mix in dry ingredients.

  4. Pour into a lightly greased muffin pan.

  5. Bake at 425 degrees for 15 to 20 minutes.
