This recipe is healthy and high fiber. It will yield 2 loaves of about 1 1/2 pounds each. Each serving/slice is about 43 grams. If you are in weightwatcher's, you can figure about 1 pointsplus point per 20 grams, so two pointsplus points per 43 gram slice.

Recipe Ingredients for Oat Bran high fiber bread

2 1/2 cups water
2 1/2 teaspoons active dry yeast
2 tablespoons canola oil
1 tbsp brown sugar
1 tbsp molasses
2 cups bran
2 cups whole wheat flour
3 cups bread flour
1 teaspoon salt

Recipe Directions for Oat Bran high fiber bread

  1. Heat water to 110 degrees. Add yeast and let bloom for about 10 minutes.

  2. Add to yeast water, 1 tbsp canola oil, brown sugar, molasses, salt, and bran. Stir to mix and let sit until bran is soft and mushy.

  3. Add both flour types to the yeast/bran and mix in stand mixer with dough hook until dough is slightly sticky to the touch but won't cling to side of bowl (5 or 10 minutes).

  4. Let dough rest in mixing bowl covered with cloth for about 10 minutes.

  5. Mix dough for another 2 minutes with stand mixer and dough hook. Coat dough with 1 tbsp canola oil and let rise in the mixing bowl covered with saran wrap. Let rise until almost 2 1/2 times the size.

  6. Preheat oven to 375 degrees.

  7. Coat two 5X9 bread pans with non-stick spray and shake flour into the pans to coat the sides.

  8. Remove risen dough from mixing bowl. Knead dough for about 5 minutes and divide into half.

  9. Shape each half and place each into a bread pan, cover with a cloth and and let rise until double.

  10. Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.
