Recipe Ingredients for Oat Bran Flax Muffins

2 serving NL High-protein Oatmeal (pkt)
2 serving Ideal Brand Xylitol (2 tbsp)
1 oz raw oat bran (1/4 cup)
1/4 cup Organic Golden Flaxseed Meal
1 tsp cinnamon
1/2 tsp baking powder
1/4 cup original egg beaters
1/4 cup half and half

Recipe Directions for Oat Bran Flax Muffins

  1. Preheat oven to 375. Grease a 12-cup MINI-muffin pan.

  2. Mix together oatmeal, xylitol, oat bran, flaxseed meal, cinnamon, and baking powder.

  3. Stir in egg beaters and cream. If batter is too thick, add water until it is the consistency of thick cake batter.

  4. Divide batter evenly into muffin pan. Bake about 15 minutes, until lightly browned and tops spring back when touched.

  5. Cool in pan on rack 3-4 minutes, then remove muffins from pan and finish cooling on rack.

  6. 3 muffins = 1 serving
