Earthy and tasty muffins make a great breakfast. Uses flax meal instead of oil. Based on a recipe on the back of Red Mill Flax Seed Meal.

Recipe Ingredients for Oat Bran Flax Muffins

1 1/2 cups White Whole Wheat Flour
3/4 cup flaxseed meal
3/4 cup oat bran
1 cups brown sugar
2 tsp baking Soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp ginger
1 1/2 cups carrots,grated
2 apples,grated
1/2 cup raisins
1 cup walnuts, chopped
1/2 cup egg substitute
1 tsp vanilla

Recipe Directions for Oat Bran Flax Muffins

  1. Mix dry ingredients.

  2. Add carrots, apples, raisins and nuts.

  3. Stir.

  4. Stir in egg substitute and vanilla.

  5. Bake in muffin tins at 350 degrees for about 20 minutes.
