0.5 cup Craisins, Sweetened Dried Cranberries
1 cup dry Old Fashioned Quaker Oats
0.75 cup Oat Bran
0.5 cup All Purpose Flour
9 tsp Domino Light Brown Sugar
5 Teaspoon Baking Powder
3 tsp Cinnamon, Ground
1 cup Milk, Nonfat, Fluid
0.25 cup Orange Juice, Chilled, Includes From Concentrate
2 large Egg, White
2 tbsp Vegetable Oil, Canola
1 medium (7" to 7-7/8" long) Bananas
1 tsp Orange Peel

Recipe Directions for Oat Bran and Dried Fruit Muffins (1/12 servs)

  1. Preheat 400. Spray 12-cup muffin pan.

  2. Combine dried fruit (chopped), rolled oats, oat bran, flour, banana (or mashed apple), brown sugar, baking powder, and cinnamon in a food processor. Pulse until just blended, transfer to bowl.

  3. Combine milk, oj, egg white, oil, and zest in another bowel. Add the milk mixture to dried fruit mixture, until just blended.

  4. Spoon the batter into cups (2/3 full). Bake until golden brown (15mins). Remove from pan (let cool 10 mins). Good for 3 days.
