Makes 24 servings



Nice breakfast muffin. Low in fat and really delicious. I measure by weight into the bowl to cut down on the clean-up.

Recipe Ingredients for Oat Bran Cardamom Muffins

315 g oat bran cereal
360 g self-rising flour
1 tsp cardamom
1 tsp cinnamon
1 tsp ginger
24 oz apple sauce
166 g honey
1 c skim milk (or 23g nonfat milk powder and 7/8 c water)
244 g egg substitute
120 g raisins
60 g dried cranberries
1 tsp lemon extract
28 g canola oil

Recipe Directions for Oat Bran Cardamom Muffins

  1. stir together all dry ingredients and spices.

  2. in separate bowl stir together wet ingredients and raisins and cranberries

  3. add dry ingredients to wet ingredients. Stir just until mixed.

  4. Bake in 24 muffin cups at 375 degrees for 25-30 minutes.

  5. Note: If you use paper liners, be sure to give them a spray with Pam or the like. These tend to grab the paper.
