While it does use butter (well, I do) it is still quite low calorie, and low fat. Being chock full of fiber-ful wheat bran and delicious rolled oats, this biscuit has a delightfully satisfying effect; often, after eating just one, I feel no further inclination to eat. Each bite can be enjoyably chewed for a while, allowing for full experience and satisfaction. Even after cooling, this biscuit retains it's sturdy, slightly crunchy exterior and chewably soft interior. This is a good biscuit to pack for a mid morning snack. Variations: A good idea is to add a few dashes of ground cloves to the mix, then dust the tops of the biscuits with some more ground cloves before you put them in the oven. It gives it a slightly fuller flavor. Recipe can also make 7 (and a half) biscuits fitting into a round pan, for a round of pull-away biscuits.

Recipe Ingredients for Oat & Bran Biscuits

1 cup flour, white
1 1/2 cups wheat bran
1/2 cups rolled oats (optional)
2 tbsp. sugar
1 tbsp. baking powder
2 tbsp. butter or hard margarine
1 1/4 cups buttermilk or soured milk

Recipe Directions for Oat & Bran Biscuits

  1. Preheat oven to 450 F or 230 C.

  2. Combine flour, bran, sugar, and baking powder in a large bowl. Cut in butter (or margarine) until mixture resembles coarse crumbs. Mix in oats.

  3. Make a well in the centre of crumbed mixture. Add buttermilk to well. Stir until a soft dough forms.

  4. Turn out dough onto a floured surface. Knead approximately eight times. Roll out or pat dough until about 3/4 inches or 2 cm thick. Cut out 9 - 10 round, flour dusted cakes approximately 2-2/5" or 6 cm in diameter.

  5. Arrange, almost touching, in a lightly greased 9 x 9" (22 x 22cm) pan. Bake for 13 - 15 minutes, or until a toothpick inserted into the centre of a bun comes out clean. If desired, let stand in pan for several minutes. Remove biscuits from pan and place on a wire rack to cool.
