450 g eggplants
1 tbsp sesame seeds
1/3 cup peanuts
1 cup coconut flakes
2 tbsp canola oil
1 tsp salt
1 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp chili powder

Recipe Directions for Oana's Stuffed Baby Eggplants

  1. 1. Make a paste from the sesame seeds, the peanuts, salt, chili powder, coriander and cumin seeds with a bit of oil.

  2. 2. Stuff the eggplants cut lenghtwise with the mixture

  3. 3. Bake at 400 degrees.
