Recipe Ingredients for Oana's Cream of Mushroom Soup (low fat)

400 g portabella mushrooms
30 g carrot
1 medium onion
20 g celery stalk
2 tbsp olive oil
6 cups low sodium chicken broth
2 tbsp cornstarch
3 garlic cloves
1/4 tsp thyme
1/4 tsp red pepper flakes
1 tsp salt

Recipe Directions for Oana's Cream of Mushroom Soup (low fat)

  1. 1. Heat the oil in a pot and add the minced onion, carrot, celery and garlic. Fry until the onion is translucent.

  2. 2. Mince or cut the mushrooms in very small pieces (it's good to use a food processor).

  3. 3. Add the mushrooms to the veggies and fry until the aroma of the mushroom is released.

  4. 4. Add the chicken broth and cook until the mushrooms no longer taste raw.

  5. 5. Add the cornstarch in a bowl and mix with cold water or chicken broth and add to the pot.

  6. 6. Let the cornstarch cook a while.

  7. 7. FInish with dill or scallions.
