Mac n cheese recipe- Makes 4 8x8 pans (each pan is 4.5 servings each)

Recipe Ingredients for OAMC FF Macaroni & Cheese (pg 118) X 3

6 c dry elbow macaroni
6 c shredded mild cheddar cheese
6 c small curd cottage cheese
3/4 c choppe onion
3 large eggs
3 c sour cream
3/4 t salt
3/4 tsp pepper
3/4 c dry bread crumbs
1/2 t paprika

Recipe Directions for OAMC FF Macaroni & Cheese (pg 118) X 3

  1. Boil pasta unitl almost done. Mix next 7 ingredients. Divide into 4 8x8 foil pans. Top each with 1/4 c dry bread crumbs & sprinkle with paprika.

  2. To bake:

  3. Bake in 350 oven uncovered 40-50 minutes until golden brown.

  4. To Freeze:

  5. Cover with saran & foil. Label with name, date & baking instructions (below) & slip into a gallon ziplock bag. Freezer shelf life 12m in a deep freezer, 6 months in a cycling frost free freezer.

  6. To Bake from frozen:

  7. Thaw. Remove saran & foil. Bake in 350 over 40-50 minutes until golden brown.

  8. Note: Can add 1/3 lb diced ham to igredient list if meat is preferred.
