Recipe Ingredients for o2bfit's Minestrone

1 tsp olive oil
1/4 cup onion, chopped
12 oz navy beans
12 oz diced tomatoes
2 cup chicken broth
1 cup beef broth
1 cup frozen spinach
1 1/2 cup macaroni

Recipe Directions for o2bfit's Minestrone

  1. sautee onion in olive oil

  2. add beans, tomatoes, broths, water & spinach. Simmer for 20 minutes. Bring water to boil. Add pasta, cooking according to package directions or until desired tenderness. Season with Salt & Pepper as desired. Serve.
