Makes 16 servings



16 servings = 2 oz per serving I use this recipe for my bread machine, so notes will pertain to that. You could convert it to a mix-knead-rise cycle by hand and bake it in your oven, but I don't provide notes for that.

Recipe Ingredients for Nutty Whole Wheat Bread

1 1/2 cups water
2 tbs honey
2 tablespoons olive oil
4 1/2 cups whole wheat flour
30 grams vital wheat gluten
1 teaspoon salt
1/4 cup wheat germ
1/4 cup pumpkin seeds
2 tablespoons sesame seeds
2 tablespoons wheat bran
1 tablespoon Bulgar Wheat
1 tbs ground flax seed
1 teaspoon dry yeast

Recipe Directions for Nutty Whole Wheat Bread

  1. Place all ingredients in your bread machine.

  2. Set machine for the 'wheat' cycle, 2 lb loaf, crust of your choice and hit 'start.'

  3. Before the last rise (when you take the paddle out of the bread machine), form the dough into a loaf shape. Sprinkle the top with a few pumpkin seeds, pressing them into the top of the loaf lightly if needed. Slice gently across the top 3 times if you want a more decorative tope.
