from Diet for a New World Homemade granola is surprisingly easy to prepare. It will keep for two to three weeks in an airtight container.

Recipe Ingredients for Nutty Sunny Granola

3 cups rolled oats
1/2 cup oat bran
1/2 cup wheat germ
1 cup raw walnuts, coarsely chopped
1/2 cup raw sunflower seeds
1 cup raisins
1/2 cup dates, pitted, coarsely chopped
1 tsp ground cinnamon
1/4 cup pure maple syrup

Recipe Directions for Nutty Sunny Granola

  1. Preheat the oven to 275 degrees.

  2. In a large bowl, combine the oats, bran, wheat germ, walnuts, and sunflower seeds and stir together. Spread the mixture evenly on a baking sheet. Bake for 15 minutes. Stir the mixture and again spread it out evenly. Bake for another 15 minutes.

  3. Transfer the toasted mixxture to a large bowl. Immediately add the raisins, dates, and cinnamon and stir together. Slowly pour in the maple syrup and stir to distribute evenly.

  4. Let cool completely before storing in an airtight container.
