Very light summer side dish - South Beach Phase 1. Please note that instead of parmeasan cheese you SHOULD use Asiago. (The calorie counter did not recognize that type of cheese, but they are roughly the same calorie value.)

Recipe Ingredients for Nutty Squash w/ Asiago Cheese

2 tsp margarine
2 cloves garlic
1 medium zucchini
1 medium yellow squash
2 tbsp chicken broth
1/8 tsp salt
1/8 tsp black pepper
1/4 c walnuts
1/3 cup parmesan cheese

Recipe Directions for Nutty Squash w/ Asiago Cheese

  1. Melt margarine in large nonstick skillet over medium-low heat.

  2. Add garlic and cook, stirring constantly for 1 minute or until soft.

  3. Add zucchini, yellow squash, broth, salt, & pepper.

  4. Bring to simmer over medium heat.

  5. Cover and simmer, stirring occasionally for 6 minutes or until tender.

  6. Sprinkle with walnuts and cheese
