Recipe Ingredients for Nutty Oatmeal Cookies

3/4 cup Butter
240 grams Blue Menu Just Peanuts Old Fashioned Peanut Butter Smooth
72 teaspoon Cane Sugar
2 large Egg, White
2 tbsp Milk, Skim
1 1/2 tbsp Vanilla Extract
1 1/4 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1/2 cup Flax, ground
1 teaspoon Baking Powder
1/2 tsp Leavening Agents, Baking Soda
2 cup dry Quick Quaker Oats
175 grams Chipits, Chocolate Chips (Hershey's)
1/2 oz (20 halves) Pecans
40 grams Coconut Meat, Dried (Desiccated), Not Sweetened

Recipe Directions for Nutty Oatmeal Cookies

  1. Preheat oven to 375 F.

  2. Beat butter, peanut butter, sugar, eggs & vanilla until thoroughly blended.

  3. Combine flour, baking powder and baking soda. Add to butter mixture gradully, beating until blended. Stir in oats, chocolate chips and nuts. Mix well.

  4. Drop by heaping tablespoonfuls about 2" apart, onto cookie sheet. Bake for 8-12 minutes or until golden. Cool for 5 minutes on sheet, then transfer to rack and cool completely.

  5. Makes about 5 dozen cookies.
