Recipe Ingredients for Nutty Cranberry Quinoa (Swanson Health Products)

2 tablespoons Olive Oil, extra virgin, Cold-Pressed
1 cup Organic Quinoa
2 cups vegetable broth
1/2 cup green onions, sliced
1 clove garlic, finely chopped
1/2 teaspoon Sage (Rubbed)
1/3 cup Dried Cranberries, Organic
1/4 cup pecans, chopped, toasted
1 cup cannellini beans, organic
1/2 teaspoon orange peel, grated
1/4 cup parsley, freshly chopped

Recipe Directions for Nutty Cranberry Quinoa (Swanson Health Products)

  1. brown quinoa in 1 T of olive oil (3-5 min), stir frequently.

  2. pour in vegetable broth, cover and cook on low until liquid is absorbed (15 min or so)

  3. in 3 qt sauce pan heat remaining oil over medium heat . Cook onion, garlic and sage in oil for about 5 minutes. Stirring until onion are crisp-tender then remove from heat and stir in cooked quinoa and all remaining ingredients except the parsley. sprinkle with parsley just before serving. (also you can add a T of coconut oil just before eating...so delicious! and healthy)
