a quick and tasty summer salad which can be eaten as a meal on it's own

Recipe Ingredients for Nutty cous cous salad

1 1/2 cups cous cous
50 g lemon juice
1 1/2 cups boiling water
2 tsp curry powder
1/2 cup fresh chopped parsley
1/4 cup freshly chopped mint leaves
60 ml olive oil
150 g crumbled feta
3/10 cup toasted pine nuts
1/5 cup toasted sunflower seeds
2 carrots, grated

Recipe Directions for Nutty cous cous salad

  1. Put the cous cous in a large bowl and pour the boiling water over, cover with cling film and let sit for 15 minutes

  2. Toast the nuts and seeds by placing in a fry pan on high heat and tossing frequently until a golden brown colour is achieved.

  3. Once the water has been soaked up into the cous cous, fluff with a fork and combine with the remaining ingredients. Season with salt and ground pepper.

  4. Refrigerate until ready to serve, or serve warm if desired.
