Recipe Ingredients for Nutty banana raisin muffins

3 ripe bananas
1 cup whole wheat flour
1/2 tsp baking soda
1 tsp cinnamon
2 egg whites
1/4 cup honey
4 oz tofu (plain)
1/4 cup chopped walnuts
1/4 cup raisins (or craisins)

Recipe Directions for Nutty banana raisin muffins

  1. Preheat oven to 350.

  2. mash bananas, set aside.

  3. mix together the flour, baking soda, and cinnamon together in a bowl.

  4. In a separate bowel, whip the egg whites till fluffy, add the honey and mix well.

  5. Blend the tofu up in a blender and add to the wet ingredients.

  6. Add the dry ingredients to the wet ingredients and mix well.

  7. Add the bananas, nuts and raisins and mix just until evenly distributed.

  8. Pour into 12 muffin tins and cook for about 20 minuted, give or take a little.
