2 T ghee 1/2 cup of sliced onions 2 cloves of garlic minced 1/3 cup chicken broth 1/8 t ground pepper 1/8 t salt 1/4 c of toasted chopped walnuts 1/3 c (1.5 oz) grated Asiago cheese

6 tsp Ghee Clarified Butter
0.75 cup, sliced Onions
3 medium Squash, Summer, Zucchini, Includes Skin
1/4 cup Chopped Walnuts
0.25 cup Chicken Broth
1.5 oz Asiago Aged Grating Cheese
2 cloves, raw Garlic

Recipe Directions for Nuttty Zucchini with Asiago Cheese

  1. melt ghee in a large non stick skillet over moderate low heat.

  2. add onions and cooked slightly

  3. add minced garlic

  4. add zucchini, broth salt and pepper

  5. bring to a simmer over medium heat stirring occasionally for about 6 min until squash is tender. Remove from heat and add toasted walnuts and grated cheese
