All the flavors, but low on fat and excess sugar. Loaded with vitamin A, C, calcium, iron and great source of fiber.

Recipe Ingredients for Nutritious AND Delicious Carrot Cake Muffins!

1 3/4 cup whole wheat flour, fine pastry style
2/3 cup brown sugar, packed
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
8 oz crushed pineapple, in juice
1/4 cup unsweetened apple sauce
1/4 cup canola oil
2 egg whites, lightly beaten
1 tsp vanilla
2 cups shredded carrots
1/4 cup raisins
1/8 cup chopped walnuts, fine pea size segments

Recipe Directions for Nutritious AND Delicious Carrot Cake Muffins!

  1. Preheat oven to 400. Lightly spray 12 muffin tin. In large bowl, combine the first 6 dry ingredients. In another bowl, combine the wet ingredients, including the juice. Pour dries into the wet bowl and combine just til blended. Stir in raisins and nuts. Spray tins with oil mist. Fill muffin tins equally.

  2. Bake on center rack of oven for 15-20 minutes. Remove muffins and cool on rack. Eat one warm and store the rest of the cool ones in a large freezer back to reheat in microwave later. You write the calories on the bag so you always know! In this case, 178 calories per luscious satisfying muffin.
