Recipe Ingredients for Nut Flour Spritz Cookies

1 1/2 cups Coconut Oil
3/4 cups raw sugar
1 egg
2 tablespoons almond milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
3 cups Almond Meal
1/2 cup Arrowroot
1 teaspoon Baking Powder

Recipe Directions for Nut Flour Spritz Cookies

  1. Preheat oven 375

  2. Warm but do not melt coconut oil

  3. Thoroughly cream coconut oil and sugar

  4. Add egg, nut milk, vanilla and almond extract; beat well

  5. Stir together flours and baking powder (and Cinnamon if you desire); gradually add to creamed mixture till a smooth dough forms.

  6. Do not chill. Place dough in some sort of CookiePro press/gun and press them onto an UNGREASSED pan.

  7. Bake 10-12 Minutes or until lightly browned.

  8. Remove from pan as soon as possible without damaging hot cookies and place on a rack to cool.

  9. Note: If you're having trouble making these stick to the pan- try washing the pan first in REALLY hot water, then frying thoroughly. If that doesn't work then chill the pan but NOT the dough.
