An ugly but delicious and healthy one pot meal.

Recipe Ingredients for Not so pretty risotto

1 cup arborio rice
2 pounds chopped collard greens
28 oz canned tomatoes
3 medium slices bacon
4 cups chicken broth
1 lb scallops
1 yellow onion
3 cloves garlic
1/2 cup red wine
3 oz parmesan cheese

Recipe Directions for Not so pretty risotto

  1. Cook collards in a little water

  2. Reduce tomatoes to a chunky sauce

  3. Brown bacon in large pot. Remove and set aside.

  4. Saute onion in bacon fat.

  5. Add rice and saute until translucent.

  6. Add wine and cook until reduced.

  7. Add 2 cups hot chicken stock. Simmer until absorbed.

  8. Repeat additions of 1/2 cup chicken stock until rice is tender.

  9. Add collards and tomatoes.

  10. Add scallops. Reduce heat to low.

  11. When scallops are cooked through stir in cheese.
