I have to have some egg yolk in an omelette!

Recipe Ingredients for Not so Egg white omelette

1/4 cup egg white
1 egg, free range
1 mushroom, organic
1 green onion, organic
1/8 tomato, organic
1/4 cup alfalfa sprouts, organic

Recipe Directions for Not so Egg white omelette

Whisk the egg separately with some pepper and a splash of water. Heat pan to high heat. Pour in egg, lower heat pulling the edges of the omelette. Throw the veggies on top (can cook the mushroom beforehand or slice very thinly). Garnish with fresh herbs, tomato and chives.
