The stuffing from Delia Smith's gorgeous Not Pork Pies, from the vegetarian cookbook. It's great in the pies, but very nice on its own too.

Recipe Ingredients for 'Not Pork' Pies Stuffing

2 oz green lentils
1/2 tbsp olive oil
1 small onion
2 oz carrot
1 clove garlic
4 oz red pepper
1 medium tomato
2 tsp tomato puree
40 g sun dried tomato
2 eggs
1 tsp mace
1 tsp cayenne pepper
1 tbsp thyme
1 tbsp parsley
1/2 tbsp sage
1 salt
1 pepper

Recipe Directions for 'Not Pork' Pies Stuffing

  1. wash the lentils, then put in a suacepan with salt and cover with water. let them boil, then simmer gently, covered, for 40-45 minutes until tender.

  2. Heat the oil and fry the shallot and carrot for 5 minutes.

  3. Add the garlic and red pepper, then cook for 5 more minutes

  4. remove from the heat and stir in the tomatoes.

  5. Drain the lentils, tip them in the mixing bowl, add the vegetables and stir thouroughly, then leave to cool.

  6. Mix the eggs, mace, cayenne, thyme, parsley and sage into the mixture and season.

  7. Either use to fill pies or bake in a loaf tin for 10-15 minutes.
