"Not Cheese" Sauce Recipe

There is a vegan version of this but I used what I had on hand, as we are not vegan. It is great over veggies or noodles or even as a warm dip.

Recipe Ingredients for "Not Cheese" Sauce

2 T butter
3 T olive oil
1/4 c all purpose flour
2 1/2 T low sodium tamari or soy sauce
1 T lemon juice
1 T sweet/White/Mellow Miso or brown miso
1 T tahini
1 T tomato paste
1 1/4 c skim milk
1/3 c nutritional yeast
1 salt and pepper to taste

Recipe Directions for "Not Cheese" Sauce

  1. In a sauce pan over medium low heat, melt butter and add olive oil. Add flour and whisk until incorporated. Cook slowly, stirring constantly, for 2-3 minutes. You're not trying to brown the roux, just take the raw taste out.

  2. Add miso, tahini and tomato paste and whisk until mixed. Add tamari and lemon juice and whisk. Slowly add the milk, mixing as you go. Add the yeast and mix well. Cook the mixture until it thickens, about 5 minutes. Add salt and pepper to taste, although salt may not be needed at all.

  3. Serve over steamed or sauteed veggies &/or noodles
