Not Canned Black Bean Soup Recipe

This is the same recipe as my other black bean soup, only less sodium because it's not from canned beans

Recipe Ingredients for not canned black bean soup

1 pound dry black beans
1 large onion, diced
1 red bell pepper, diced
1 green pepper, diced
2 medium carrots, shredded
2 1/2 ounces 30% less sodium taco seasoning (2 packets)
2 medium tomatoes, diced

Recipe Directions for not canned black bean soup

  1. Soak the beans over night. Drain and add fresh water so they are covered about 2 inches. Bring to a boil and simmer for about 90 minutes. Do not add salt, as this will actually increase cooking time.

  2. When the beans are almost done, add the vegetables to a non-stick pan and saute in their own juices. You can add a bit of water to get them going. Add a sprinkle of taco seasoning.

  3. When the beans are done, split them on half and mash half of them. Mix the beans back together and add vegetables and taco seasoning.

  4. You may garnish with avacado, sour cream, cheese, or guacamole, or serve with tortillas if you like. These things aren't included in the recipe and will have to be added separately for an accurate calorie count
