Recipe Ingredients for Norwegian Pancakes

3 eggs
1/2 cup half and half
3/4 cup whole milk
2 cup flour
3/4 cup water
2 tbsp sugar
1/2 tsp salt
1/8 tsp nutmeg
1/2 cup butter

Recipe Directions for Norwegian Pancakes

  1. beat eggs in lg bowl for 1 minute

  2. add half and half, milk and water

  3. beat together

  4. mix dry ingredients in small bowl. Add to egg/milk mixture. Beat for 30 seconds

  5. gradually stir in melted cooled butter

  6. ladle 1/3 cup batter onto nonstick fry pan

  7. cook 1 minute, flip cook 30 seconds more

  8. serve pancake topped with fresh fruit and whipped cream
