Recipe Ingredients for North African Couscous Paella

1 tbsp olive oil
140 g onion, diced
2 cloves garlic, minced
1 lb extra-firm tofu, cubed
1 c frozen peas
2 c water, at the boil
1 c couscous

Recipe Directions for North African Couscous Paella

  1. Soften the onions and garlic in the olive oil, ~5 min. Add cardamom, cumin, curry, and turmeric to taste. (~1/2 tbsp cardamom, ~1/2 tsp ea of cumin and curry, 1/4 tsp of turmeric)

  2. Add the tofu, mix, and heat through, ~5 min.

  3. Add the peas, water, and couscous, cook 5 more minutes.

  4. Serve w/chopped green onions
