Recipe Ingredients for north african chickpeas

1 medium onion
1 tbsp minced garlic
1 tbsp minced ginger
2 tbsp red wine
1 tsp cumin
1 tsp cinnamon
1 tsp paprika
1/2 tsp crushed red pepper
1 cup water
1/2 tsp salt
1 1/2 lbs sweet potatoes
1/4 cup dried apricots
1 1/2 cups garbanzo beans
1/4 cup raisins
2 tbsp lemon juice
1/4 cup almonds

Recipe Directions for north african chickpeas

  1. In a medium saucepan, combine the onion, garlic, ginger, and wine. Cover and sweat over low heat for 5 minutes. Add the cumin, cinnamon, paprika, and red pepper flakes and cook, uncovered, 1 minute longer. Add the water, salt, sweet potatoes, and apricots. Bring to a boil, cover and simmer until the sweet potatoes are just tender, about 15 minutes.

  2. Add the chick peas, raisins, and lemon juice. Cook, stirring occasionally, for about 5 minutes until chick peas are hot. Add the sliced almonds.

  3. Serve over a cooked grain.
