Pork medallions cooked with apple in Creme Fraiche

Recipe Ingredients for Normandy Pork fillet

1/4 g Cooking Spray
200 grams Pork, Fresh, Loin, Tenderloin
1 tbsp chopped Shallots
1 small (2-3/4") Apples
1 clove Garlic
125 grams Cider
2 serving Half Fat Creme Fraiche
1 dash Salt, Table
1 dash Pepper, Black

Recipe Directions for Normandy Pork fillet

Pan cook the pork add shallot and apple. Add garlic and then the cider. bubble up hard for 2/3 minutes and reduce the liquid. Turn down heat and add creme fraiche. Add pork and sauce coat it well and season. Serve with steamed green beans and carrots.
